Paleo Elvis PB Banana Chocolate Chip Cookies

Well hello there!

I feel it has been quite some time since my last post and for that, I do apologize! This year has been a whirlwind of exciting events and I am happy to say that I am back at it!

Expect to see these recipes regularly.

Nothing but Nourished has taken off and I couldn't be more pleased. My mission of helping people live their lives free from physical, emotional and financial pain is starting to get accomplished one life at a time. Making health and wellness fun, simple, easy and affordable has always been the goal- no matter what your background is, you get to feel your best at all times.

I am a stickler for making sure none of my clients feel like they are missing out when it comes to food- I don't believe in diets nor do I believe in deprivation. We can abstain from certain things for a temporary period of time but then, after the weight loss goal (or whatever goal) is accomplished, one tends to completely binge on their "forbidden" foods... they gain the weight back, wreak havoc on their metabolism and up worse off than before they had ever started the diet... Boooooo!!! We don't want that!

As a trained chef and certified health coach, I want to make health fun and sustainable! That is why I have created a host of delicious recipes that satisfy those cravings while nourishing the body at the same time; The foods taste delicious, are incredibly nutritious and make one feel like they are still indulging... win win right?

Many are fans of our dear late Elvis and share his love for the delightful duo of peanut butter and banana- I mean, can it get any better?! We enjoy these two on toast, in smoothies, plain by themselves, in baked goods, etc. etc. so with this in mind, I created a scrumptious cookie recipe that not only tastes wonderful but also protects your health by avoiding the common inflammatory ingredients such as gluten, dairy or refined sugar!

Elvis Peanut Butter Banana Chocolate Chip Cookies

  • 1 Large, Ripe Banana

  • 1 Cup Organic Peanut Butter (sugar free! Ingredients should be peanuts, salt and peanut oil)

  • 1 Organic Egg

  • 1/2 Cup Almond Flour (not almond meal)

  • 1/4 Cup Raw Organic Honey (or maple syrup)

  • 1 Teaspoon Vanilla Extract

  • 1/2 Teaspoon Baking Soda

  • 1/2 Teaspoon Sea Salt

  • 1 Cup Dairy-Free Chocolate Chips (cacao nibs will do too!)

Heat oven to 350. Line two baking sheets with parchment paper.

1. In large mixing bowl, whisk banana well until smooth.

2. Add peanut butter, egg, honey and vanilla.

3. Add dry ingredients and stir until well-mixed.

4. Fold in chocolate chips.

5. Scoop cookie dough by the spoonful onto baking sheets and bake until golden brown, about 10 minutes.
