Paleo Blueberry Nectarine Muffins

Happy Tuesday everyone!

As I write this, I am currently sipping my favorite creamy vanilla collagen coffee, watching ginormous waves crashing in the Gulf of Mexico as Hurricane Sally makes her debut. It's another cozy day on the beach so why not bake and blog about it? ;)

These delicious Paleo Blueberry Nectarine Muffins are the perfect healthy snack option, breakfast pairing (with your favorite shake/smoothie) or even dessert, as they have a beautiful balance of sweet and savory going on.

Having no gluten, dairy or processed sugar (*cough hence paleo* ), these delicious treats are made with almond flour, containing a good amount of healthy fat, magnesium, vitamins B and E, fiber, antioxidants and, with the addition of the blueberries and nectarine, Vitamin C!

Try one fresh out of the oven with a tablespoon of unsweetened jam and/or almond butter, a tiny drizzle of honey and enjoy!

Paleo Blueberry Nectarine Muffins

  • 1 Egg

  • 1/2 Cup almond/coconut milk (either)

  • 2 Tablespoons organic coconut oil

  • 1 Tablespoon organic raw honey or maple syrup (optional)

  • 1/2 Tsp vanilla extract

  • 1 1/4 Cup almond flour (not meal)

  • 1/2 Teaspoon cinnamon

  • 1/4 Teaspoon salt

  • 1/4 Teaspoon baking soda

  • 1 Cup organic blueberries

  • 1 Nectarine, diced small

Preheat oven to 350.

1. In medium-sized bowl, mix together the first five ingredients until smooth.

2. Fold in the almond flour, cinnamon, salt and baking soda, mixing until well-incorporated.

3. Fold in the blueberries and nectarine.

4. Scoop into muffin tin, lined with cupcake liners, filling to about 3/4 full. Sprinkle 5-6 blueberries on top of each... it just looks pretty!

5. Bake for 25-30 minutes or until lightly browned and set. Remove liners from pan and let cool on wire rack for 20 minutes.
